I felt like my husband needed a little TLC tonight night, so I decided to make one of his favorite comfort foods - chicken bundles :) Now, if you're like most people I know, you're saying, what the heck is a chicken bundle?! Let me tell you - it's delish! A little piece of chicken-y goodness in your mouth! I found a recipe kind of like it on allrecipes.com - however I've changed it so much I'm pretty sure it's my own now :)
Ingredients:
1 Rotisserie chicken (or 2 large chicken breasts, boiled and cubed)
1 can cream of chicken
1 pkg Pillsbury classic pizza dough
1 8oz pkg Philly cream cheese, close to room temp
2 large broccoli florets, chopped into bite size pieces
dash of garlic salt and pepper to taste
1 can French's crunchy onions
1 can French's crunchy onions
2 pats of butter, melted
Directions & My Two Cents
1. Spread out pizza dough as thin as you can without it breaking, cut into six even squares with a pizza cutter.
2. Cut all the meat off of the chicken, I've found this is saves me a lot of time in the kitchen when I'm adding chicken to a recipe for this or chicken pot pie or enchiladas, etc. You'll probably have some left over, it's also great for salads!
3. Mix together the cream of chicken, broccoli, cream cheese, chicken, a handful of the crunchy onions (I added this ingredient so I always just eyeball it) garlic salt and pepper.
4. Put a little of the mixture in the middle of each dough square, then fold each corner towards the center to where they meet, pinch together any openings that still remain.
5. Brush the melted butter (or egg wash if you prefer) over the top of the bundle.
6. Bake in the oven until golden brown (about 18 minutes) or until the dough is cooked through and the insides are bubbly, you may have to cut into one to make sure. When you have about 3 minutes left, sprinkle some crunchy onions on each bundle, this is Bryan's favorite part :)
7. Serve with rice if you wish, and enjoy! My finished product :) I don't make this very often, but when I do, I get RAVE reviews from the hubster.
And for dessert, we are having these... We can take a night off of eating healthier....Right? ;) Sometimes you just need some comfort food!
