Taco Salad Tuesday

Tuesday nights = GLEE
And this particular Tuesday night it also = Taco Salad! 

It's not your mom's old taco salad, it's got a little twist! It's my Grandma Hordan's recipe, however I've tweaked it a little.

Ingredients [based on feeding 4]:
1 1/2 pkg's ground turkey
1 pkg taco seasoning
2 cans pinto or kidney beans
1 pkg shredded mixed cheese
1 bag original Frito's
1 bottle French salad dressing
1 head of lettuce
1 can olives (optional)

Directions & My Two Cents
1. Brown ground turkey, add taco seasoning as directed on the package.
2. Chop the head of lettuce into bite size pieces
3. Assemble to your desire - my favorite from bottom to top in layers
-fritos
-meat
-beans
-cheese
-olives
-lettuce
-drizzle of French dressing

Serve with Spanish rice if you're feeling extra fancy! A definite crowd pleaser and something a little different than your normal Taco Tuesday - yummm. Thought I'd share with you, hope you like it as much as we do :)

  3. Sounds delish! We do taco-chip salads alot on Fridays for Family Movie Night. All the standard taco toppings, but we use scoop tostitos so the kids can fill their own little "tacos" with whatever they want. It's a big hit. I try to throw a new veggie on the table every time to see what I can get them to eat, too!
