Oh yeah, you heard me right!
I don't know if I've already mentioned how much Bryan likes bacon, ahem, loves bacon, but I'm pretty sure he loves anything with bacon on it, around it, in it... I'm going to go ahead and go out on a limb and say if we weren't already married, bacon would be the runner up.
Place: my apartment
Plan: make these little babies and enjoy
Ingredients:
20 fresh whole jalapenos
2 8oz cubes of cream cheese
1 lb(pkg) regular sliced bacon cut into three sections
Directions:
1. Cut the jalapenos in half length wise. With a spoon (or I used a knife) cut out the seeds/membrane.
2. Smear the softened cream cheese into half using the back of a spoon.
3. Wrap a piece of the bacon around each jalapeno and secure it with a toothpick
4. Bake on a pan with a rack at 375degrees F for 20-25 minutes. If the bacon still isn't looking a little crispy, turn the broiler on for a couple minutes until it does.
5. Serve and enjoy!
My two cents:
1. Wear rubber gloves if you have them, I felt like I was doing surgery on the jalapenos but I would rather be safe than accidently wipe it in my eye.
2. Bryan and I both decided it would have been even BETTER if I had sprinkled a little better if I had sprinkled a tiny bit of garlic salt on each jalapeno/cream cheese before wrapping it in bacon.

ReplyDeleteMy Hubs is the same way. He even had a bacon wallet for a year. It's no longer but he always tried to convince people that it smelled like bacon (not just looked like bacon) and when they'd smell it, he'd hit it against their nose. Seemed entertaining at the time...but sounds pretty dumb now :)
